Oatmeal Cranberry White Chocolate Chunk Cookies

Deena asked me for this recipe. So I thought as long as I was typing, I might as well post it.


2/3 cup butter, melted

2/3 cup brown sugar

1 large egg

2 Tablespoon honey

1 teaspoon vanilla

1 1/2 cups old-fashioned oats

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 6-ounce package Craisins (about 1 cup)

2/3 cup white chocolate chunks or chips

1/2 cup toasted pecans, chopped

DIRECTIONS:Preheat oven to 350ºF. Using an electric mixer, beat butter and sugar together. Add eggs, honey, and vanilla mixing well. Combine oats, flour, baking soda, cinnamon, and salt in a separate mixing bowl. Add dry ingredients to butter mixture in several additions, mixing well after each addition. Stir in sweetened dried cranberries, pecans, and white chocolate chunks. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 12-15 minutes or until golden brown. Cool on wire rack. Makes approximately 2 1/2 dozen cookies.
