A few 'shrooms make a really yummy soup

The natives are getting restless...sorry, here is the recipe I promised.

Mushroom Barley Soup

8 cups chicken broth
1 cup pearled barley
Cook barley in broth until tender (about 45 minutes.)

1 lg onion chopped
2 Tbl olive oil
2 cloves garlic minced
saute onions in olive oil until transparent

1 lb fresh mushrooms, sliced
3 Tbl butter
1 tsp salt
Saute mushrooms in butter until soft and add

1 cup of dry sherry
reduce wine by half

Combine onions and mushrooms with broth and barley and add
4 Tbl soy sauce
1 tsp dill
freshly ground pepper
2 cups shredded chicken

There you it dinner!
